Carving the capon

Grown to maturity for a full and richer flavour, Capon makes an ideal alternative to the traditional Christmas turkey for those who require a smaller oven-ready bird. These large chickens are free-range and reared by Richard Waller at his farm in the Aylesbury Vale.
